Tortellini soup with beef
Chilly weather was made for cozy soups, that’s a scientific fact, right? I mean there’s something incredibly comforting about holding a warm bowl of creamy soup between your hands when its cold outside! This tortellini soup recipe is the perfect dish to make if you are craving a big bowl of creamy, indulgent soup.
This mouthwatering tortellini soup is hearty and filling, it’s made in only 30 minutes (or a bit less), I mean this is pretty much the perfect recipe! And not to mention it’s so flavorful! Like really packed with flavors so if you are looking for something that packs a punch, this beef tortellini soup is it.

The reason this tortellini soup recipe is so flavorful is that we have a lot of different layers of flavor happening in here:
- First, we have the onion and garlic
- Then we have the browned beef that adds some smokiness to the dish
- We also have the tomato paste that gives it a bit of tanginess
- And then the oregano and paprika that give it a spicy kick.
But there’s more to it! The stock balances all the flavors while the stuffed tortellini brings everything together. Trust me when I say every spoonful of this easy tortellini soup is like a party in your mouth.
How to make creamy tortellini soup recipe without adding cream
In short: Diced sweet potatoes. Yup, this secret ingredient not only gives it even more flavor but makes it look like the perfect Fall dish. The starch in the sweet potatoes gets released while you simmer the tortellini soup on the stove top and makes this soup uber-rich and creamy without the need to add cream or flour.
How long will tortellini soup last?
Ha! This is one of those dishes that are best when served right from the stove top – and hey! it only takes 30 minutes from start to finish so there’s no excuse!. However, if you have leftovers you can store them in the fridge for up to 3 days.
I don’t advise freezing it because pasta-based soups are not great when thawed (basically pasta turns to mush). Don’t worry about it because this is so good everyone on the table will ask for seconds (and even thirds!).
